This is a great basic buttercream frosting recipe that I have been using for years. It is perfect for those (like me) who love a super sweet frosting with that great, not-too-smooth, texture. It also tints beautifully and is tasty with other flavorings; I have put almond extract, cocoa and cinnamon in it before to wonderful results.
Ingredients:
1 cup (2 sticks) butter, room temperature
2 tbsp. vanilla extract
2 tbsp. milk
6 cups powdered sugar
Directions:
Put butter in a mixing bowl; mix on medium speed for 1 minute, until it lightens.
Add sugar one cup at a time, mixing on medium-high speed for 1 minute after each addition. Add vanilla between the first and second additions of sugar.
After adding sixth and final cup of sugar, scrape the sides and bottom of the bowl and add milk. Do a final mix on medium-high speed for 1 to 2 minutes until light and fluffy.
Yields enough frosting to cover two 9″ layers or up to 36 cupcakes.
