Shortbread cookies are simple and delicious – this recipe has only four ingredients. I don’t think there is a person alive who doesn’t like these.
Ingredients:
1/2 cup (1 stick) butter, softened
1/3 cup granulated sugar
1 egg yolk
1 1/8 cups flour (note: 1/8 cup = 2 tablespoons)
Directions:
Cream the butter and sugar. Beat in the egg yolk. Stir in the flour. Shape the dough into a 1 1/2″ roll on plastic wrap or wax paper. Wrap well and refrigerate at least 2 hours. Preheat the oven to 325 degrees. Slice dough into 1/4″ thick slices. Place 1″ apart on an ungreased baking sheet (line with parchment paper if you have it) and bake 15 to 20 minutes, or until the edges are lightly browned. Remove from baking sheet and cool completely on a rack.
Makes about 2 dozen.
